Martin’s Raisin Roundies

I thought for sure that I would find many examples of Martin’s Raisin Roundies online. I guess I shouldn’t be surprised that people don’t actually want to make this recipe, but instead post the quote on Tumblr and leave it at that. A completely valid life choice I might add, since I’m so very lazy and all. Faberge Egg Salad had a yummy recipe for Martin’s Raisin Roundies, but it wasn’t exactly what I was looking for. In the episode the cookies look like little sandwiches as shown in this terrifying screenshot where Mrs. Krabappel is somehow able to bend her head to her ankles and have her head upright as well:

I found my inspiration on Fish Trip Café and followed that recipe fairly closely. The only major aspect of the recipe that I changed from the original was that I didn’t soak my raisins in rum. I don’t think Martin is old enough to cook with alcohol even though I’m sure Mrs. Krabappel would appreciate it.

Ingredients

Cookies

  • 1/2 cup Flour
  • 1/8 cup Almond Powder
  • 1/4 cup butter
  • 1/8 cup Sugar
  • 1/2 teaspoon Baking Powder
  • 1 egg yolk

Raisin Cream Filling

  • 1/4 cup Butter
  • 1/4 cup White Chocolate
  • 1/2 – 1/4 cup Raisins

Directions

Cookies

Combine dry ingredients into a bowl and set aside. Beat butter and sugar together until fluffy, then add egg yolk. Add dry ingredients until thoroughly mixed. Shape the cookie dough into log and wrap with cling wrap and store in the fridge for a few hours until firm. Cut the cookies and place on a lined baking tray. Bake in the oven at 350F for approximately 15 minutes.

Raisin Cream Filling

Melt the white chocolate in a bowl placed over boiling water. Beat melted (slightly cooled) white chocolate with butter. Mix in raisins and let this cool until it’s ready to spread on cookies.

I am extremely pleased with how these cookies turned out. Not only did they taste great, they also look quite sophisticated – like something you would buy at a high end coffee shop. Considering that many of my baked goods are of the “look bad, taste yummy” variety, this was an especially satisfying recipe to make.

I always thought they were just oatmeal raisin cookies, never knew about or seen a raisin/cookie-cream sandwich. I do prefer raisin to chocolate chip, despite the fact they increase your chances of getting carsick in the principal’s office.
