While The Simpsons have many Halloween and Christmas themed episodes, Easter ones are much rarer. And Simpsons Bible Stories isn’t even really about Easter, but what are you gonna do? I guess I’ll make Coleslaw with Pineapple and German Potato Salad!
I didn’t really know what German potato salad was until I started researching this recipe. It’s made the same way you make “regular” potato salad, but you don’t use mayonnaise – which is maybe why Homer doesn’t like it? But my recipe used bacon, a great substitute for gum by the way. The coleslaw did include mayo but my guess is that the addition of a fruit is what upsets Homer on that one.
Neither of these recipes are wholly my own, they are somewhat taken from other sources: Coleslaw with Pineapple and German Potato Salad. Of course, I rarely follow recipes exarctly because that would be boring.
Ingredients
Coleslaw
- 1 cup mayo
- 3 tablespoons lemon juice
- 2 tablespoons sugar
- 1 teaspoon salt
- 6 cups Shredded cabbage
- 1 cup shredded carrots
- 1 cup pineapple canned or fresh (I used fresh)
Potato Salad
- 2 pounds white new potatoes, cut in half
- Kosher salt
- Extra-virgin olive oil
- 8 bacon slices, cut into lardons
- 1 onion, cut into 1/4-inch dice
- 1/2 cup chicken stock
- 1/4 cup apple cider vinegar
- 1 bunch fresh chives, finely chopped
Directions:
Potato Salad: Cook the potatoes until soft and then “use the forks” to test and make sure. Cut bacon into little bacon bit and cook. Then cook the onions before adding the bacon back together. Combine with all other ingredients and potatoes.
Coleslaw: Chop and all ingredients and combine. Just a note that julienne carrots are a pain to prepare but do look fancy.
Both of these salads were a big hit so maybe hell isn’t so bad after all? I had a feeling people would like the potato salad since, you know, bacon. But the coleslaw went over very well too.
