Gazpacho For All

For years I thought that Barney’s taunt “Go back to Russia” was mocking Lisa because he thought Russian’s couldn’t afford meat. But I recently have considered that maybe Barney was mistaking Gazpacho for Borscht? Russian’s traditionally eat Borscht you see. The line works perfectly either way but having eaten both types of soup, I have to say I prefer Gazpacho over Borscht. Perhaps I’m still traumatized from all that Rootmarm I ate.

Ingredients

• 1 small cucumbers
• 1 red pepper
• 3 ripe tomatoes
• 2 cloves garlic
• 1/2 cup of water
• 1/2 tbsp Balsamic vinegar
• 1⁄4 cup extra-virgin olive oil
• Salt and pepper to taste

Directions

Peel and deseed cucumber and deseed tomato. Puree vegetables in a blender or food processor along with the oil and water until well combined. Use a sieve to make sure the mixture is very smooth. Salt and pepper to taste and then chill for a few hours before serving. Optional: going back to Russia.

Gazpacho is recommended served as an appetizer, and I can see why. A few sips of the cold soup is quite refreshing, a whole bowl doesn’t go down quite as well. But I made more than I bargained for and pretty much ate if for two days straight because I refuse to waste food that isn’t Bubble Crum. Naturally all the meat eaters at at Homer’s BBBQ mocks Lisa for her dish. But there is literally no regard for her Gazpacho – to the point where everyone just lets Santa’s Little Helper eat it straight off the table:

I find it hard to believe that Santa’s Little Helper wouldn’t just be trolling for scraps of meat on the ground, perhaps he hasn’t heard of the food chain?
